What They Make
Smoked Meats: Beef Brisket (smoked for 12 hours with a house-made Horopito rub over charcoal and fruit wood), Low and Slow Pork Butt with vinegar BBQ sauce, Pulled Lamb Shoulder rubbed with cumin and coriander. Grilled Meats: Grilled free-range pork loin with mustard and fennel rub, Butterflied lamb leg with mint salsa verde, Brined Turkey Breast with cranberry and mustard relish, Grilled free-range chicken wings with house buffalo sauce. Sausages: Pork, Jalapeno and Cheddar Sausages. Burgers & Hotdogs: Cheeseburgers (ground chuck patty, lettuce, pickles, burger sauce, sesame bun), Smoked hotdogs (house sausage, pickle relish, Carolina mustard, soft roll). Tacos: Smoked brisket tacos, 12-hour smoked brisket taco (iceberg, hot sauce mayo, pickles). Skewers: Pork belly skewers with KC style sweet BBQ sauce, pickled celery, and crispy onions.
